  • Almond-Crusted Tilapia
    Preheat oven to 350 degrees. Place rack on to a foil lined cookie sheet and spray rack Place first 4 ingredients in a blender or food processor; process 45 seconds or until finely ground.

  • Apple Brown Betty
    Preheat the oven to 350° F. Combine the apples, apple cider, 1 tbsp of the brown sugar, the vanilla and ½ tsp of the cinnamon in a large saucepan over medium-high heat. Cook, stirring occasionally, until the apples are tender but still retain their shape, about 10 minutes. Stir in 1 tbsp of the butter until melted, remove from the heat, and transfer the apple mixture to a 9-inch pie plate or a ceramic dish.

    Bring a large saucepan of salted water to a boil. Stir in orzo and return to a boil; cook until done, about 8 to 10 minutes. Drain orzo and rinse under cold water; allow to drain completely.

    Using a medium-sized bowl, combine the buttermilk with the egg, ½ tbsp of the poultry seasoning, and ½ tsp of the salt and the pepper and the hot sauce and mix well. Set the bowl aside.

    Preheat oven to 400 degrees. Place chicken breast on a baking sheet, and season with ½ teaspoon cumin, salt and pepper. Bake for 20 minutes or until cooked through. Let cool for 5-10 minutes, then cut into small pieces.

  • Chicken and Black Bean Sauce
    Lightly spray a large saucepan with cooking spray. Sauté onions and garlic over medium heat until onions are translucent. Add the beans, chipotle, chicken stock, tomatoes, cilantro and salt. Simmer 15-20 minutes, or until the beans are slightly thickened. Remove from heat and let cool slightly. Puree half the bean mixture in a blender or food processor; place in a bowl with the rest of the beans and mix together.
